Put the cumin seeds, black peppercorns and a pinch of salt in the bottom part of the Flavour Shaker™. Drop the ball in and screw the top on tightly. Shake well for 10 seconds or until the spices are ground up. Add the garlic, screw the top back on and shake until you have a paste.
Add the chilli followed by the coriander leaves and stalks and shake again briefly. Now add one avocado, a half at a time, with a squeeze of lime juice. Shake until the mix is as smooth as you like your guacamole.
Transfer the guacamole to a bowl and stir in the chopped cherry tomatoes and red onion. Taste and season with more salt and pepper if you like.
Great for dipping tortillas and quesadillas. If you want to make your guacamole a bit chunkier or to make it go further, you can chop another avocado up and stir it through at the end
